Banana Split Dream

At Holiday time, sprinkle with cut-up maraschino cherries and pistachio nuts for a colorful dessert.

Ingredients
  1. 1 1/2 cups organic vegan graham crackers rolled into crumbs
  2. 6 tablespoons vegan butter, melted
  3. 1/4 to 1/2 teaspoon cinnamon
  4. 1/4 cup Agave sweetener
  5. 3/4 cups pecans, chopped
  6. 5 sliced bananas
  7. Your favorite vegan ice cream
  8. 1 cup vegan chocolate chips
  9. 1 1/2 cups vegan condensed milk
  10. 1/2 cup vegan Earth Balance Butter
  11. 1 teaspoon vanilla extract
  12. Pinch of salt
Instructions
  1. Mix the following ingredients together until well moistened. Reserve 1/2 cup of this mixture for the topping. 1 1/2 cups organic vegan graham crackers rolled into crumbs; 6 tablespoons vegan butter, melted; 1/4 to 1/2 teaspoon cinnamon; 1/4 cup Agave sweetener; 3/4 cusps pecans, chopped
  2. Transfer the remaining mixture to a 9 x 13 baking dish and with the back of a spoon or your clean fingertips, evenly distribute over the bottom and a short way up the sides of the pan.
  3. Add a layer of five sliced bananas. Then add a layer of your favorite vegan ice cream.Place dish in freezer until the following mixture has cooled.
  4. Boil the following for 8 minutes: 1 cup vegan chocolate chips; 1 1/2 cups vegan condensed milk; 1/2 cup vegan Earth Balance Butter; 1 teaspoon vanilla extract; Pinch of salt
  5. Cool this mixture very well. When cooled, spread over the ice cream. Yet, on top of this, spread 1/2 pint of vegan whipped cream and sprinkle with reserved crumbs. If you like nuts as I do, sprinkle a few of these on, too, for added pleasure. Keep in freezer overnight.
