Chickpea, Brussel Sprouts Mac

Step 1

Saute carrots, garlic and onion in Dutch oven for about 5 minutes.

Step 2

Add water, vegetable broth and tomatoes. Add seasonings and nutritional yeast. Bring to boil, then turn to simmer and let cook for 30 minutes.

Step 3

Add Brussels sprouts and macaroni and cook for another 10 minutes or until done.

Easy Enchilada Sauce

Step 1

To a sauce pan, add - oil, flour, chili powder Stir until smooth and slightly thickened

Step 2

Add - cumin, vegetable broth, tomato sauce, 1/4 teaspoon garlic powder Stir all ingredients until well mixed.

Step 3

Simmer for 20 - 30 minutes and spoon over burritos.
